Barista pouring espresso in a sunlit Scandinavian café

Vol. 09 — A Slower Morning

The quiet art
of the morning.

Kinsfolk is a specialty coffee roastery and a small room on Linden Row. We open at seven, when the light is still soft and the ovens have just finished their work.

01 · Prologue

A room made of oak, linen and light. A cup poured with attention. Bread that still remembers the oven. We built Kinsfolk for the hour of the day when the city is still deciding what it wants to be.

Our beans travel a short line — from four farms we return to each harvest, into a Loring roaster on Refshaleøen, into your cup within nine days.

The kitchen bakes at first light. Sourdough from a mother started in 2015, viennoiserie laminated the night before, jams put up in August.

The room is intentionally small. Twenty-four seats, a long oak bar, a bench beneath the window that catches the sun until noon.

02 · The Room

Twenty-four seats,
one long window.

Ash floors from a Jutland mill. Curtains washed to the colour of old paper. The bar is a single plank of European oak — chosen for the way it catches the morning.

Still Life

“Everything on the table has been chosen twice — once for how it works, once for how it feels in the hand.”

— Ines Holm, Founder

03 · Method

From cherry
to cup, slowly.

  1. I

    Sourced

Four farms across Ethiopia, Colombia and Guatemala. Contracts we renew, not rewrite.

  2. II

    Roasted

Twelve-kilo batches on a Loring, cupped every morning, released within a week.

  3. III

    Brewed

La Marzocco Linea Mini, Origami dripper, softened water at 92°. Nothing complicated.

  4. IV

    Poured

Into a warm cup, at a small table, with time to sit. This is the whole point.

05 · The People

Meet the
people behind
the bar.

Fourteen baristas, three bakers, one head roaster. Most have been here for years, which is unusual in this trade. We think it’s because the room is calm, the beans are honest, and the coffee is always the point.
